Lemon Basil Wild Pasta
A bright 20-minute pasta with lemon, basil, olive oil and a glossy peppery finish.
Ingredients
- 180 g spaghetti or linguine
- 1 lemon, zested and juiced
- 2 tbsp extra virgin olive oil
- 1 small garlic clove, finely grated
- A handful of basil leaves
- 25 g parmesan or pecorino, finely grated
- Freshly ground black pepper
- Sea salt
Method
- Step 1. Boil the pasta in well-salted water until just al dente. Reserve a cup of pasta water before draining.
- Step 2. Warm olive oil with grated garlic, lemon zest and a pinch of black pepper for 30 seconds over low heat.
- Step 3. Add pasta, lemon juice and a splash of pasta water. Toss until the sauce turns glossy.
- Step 4. Fold in cheese and torn basil. Adjust salt, pepper and lemon before serving.
