Lemon Basil Wild Pasta

A bright 20-minute pasta with lemon, basil, olive oil and a glossy peppery finish.

Lemon Basil Wild Pasta

Ingredients

  • 180 g spaghetti or linguine
  • 1 lemon, zested and juiced
  • 2 tbsp extra virgin olive oil
  • 1 small garlic clove, finely grated
  • A handful of basil leaves
  • 25 g parmesan or pecorino, finely grated
  • Freshly ground black pepper
  • Sea salt

Method

  1. Step 1. Boil the pasta in well-salted water until just al dente. Reserve a cup of pasta water before draining.
  2. Step 2. Warm olive oil with grated garlic, lemon zest and a pinch of black pepper for 30 seconds over low heat.
  3. Step 3. Add pasta, lemon juice and a splash of pasta water. Toss until the sauce turns glossy.
  4. Step 4. Fold in cheese and torn basil. Adjust salt, pepper and lemon before serving.
